Professor of Management and Business Innovation at the Faculty of Gastronomic Sciences of the Mondragon University, best known as the Basque Culinary Center.

Since 2012, Michelangelo works in partnership with danish non-for-profit the Melting Pot Foundation, the gastronomic entrepreneur and food activist Claus Meyers and IFU - Investment Fund for Developing Countries. Together, Michelangelo founded and lead as CEO, an ecosystem of interconnected social enterprises located in Bolivia and Colombia, shaped by a high-end restaurant, food schools and community eateries, hygiene and food safety programs, street food touristic tours and food transportation units. All aiming to provide value to vulnerable communities through education, cultural empowerment, and responsible business.
